shop and very proper tea room, is pleased to share two of her most popular tea

Rum and Currant Flan
Set oven to 350F. Roll out 9 oz of shortcrust pastry to line
a 9 inch pie plate. Melt 2 oz of butter over gentle heat. Add 4 oz sugar and 4
oz of currants. Stir. Remove from the heat and add 1 teaspoon of vanilla
essence and 3 teaspoons of rum. Add one beaten egg. Pour mixture into uncooked
pastry case and bake for 20-25 minutes. Allow to cool and then cover with a
thin layer of white glace icing, or use left-over pastry strips to make a
lattice pattern on the flan before baking.
Lemon Cake
Grease and line a 2lb loaf tin. Set oven to 350F. Cream 4 oz
of soft butter and 6 oz of caster sugar together. Add 2 large eggs, 6 oz of
sifted Self-raising flour, the grated rind of one lemon and 4 tablespoons of milk.
Mix well to a soft dropping consistency. Put into tin and smooth over the top.
Bake for 40-45 minutes, until firm. Mix sifted icing sugar (3 tablespoons) with
3 tablespoons of fresh lemon juice and pour over the cake as soon as it comes
out of the oven. Leave in tin until cold.
