Welcome to Lucy Greenwood's Very Proper Tea Room


Today, in celebration of this week’s release of A LOVELINESS OF LADYBIRDS, Miss Lucy Greenwood, proprietress of “Bespoke Temptations” cake shop and very proper tea room, is pleased to share two of her most popular tea room recipes. Rum and Currant Flan

Set oven to 350F. Roll out 9 oz of shortcrust pastry to line a 9 inch pie plate. Melt 2 oz of butter over gentle heat. Add 4 oz sugar and 4 oz of currants. Stir. Remove from the heat and add 1 teaspoon of vanilla essence and 3 teaspoons of rum. Add one beaten egg. Pour mixture into uncooked pastry case and bake for 20-25 minutes. Allow to cool and then cover with a thin layer of white glace icing, or use left-over pastry strips to make a lattice pattern on the flan before baking.



Lemon Cake

Grease and line a 2lb loaf tin. Set oven to 350F. Cream 4 oz of soft butter and 6 oz of caster sugar together. Add 2 large eggs, 6 oz of sifted Self-raising flour, the grated rind of one lemon and 4 tablespoons of milk. Mix well to a soft dropping consistency. Put into tin and smooth over the top. Bake for 40-45 minutes, until firm. Mix sifted icing sugar (3 tablespoons) with 3 tablespoons of fresh lemon juice and pour over the cake as soon as it comes out of the oven. Leave in tin until cold.
